Twix biscuits

Ingredients
For the shortbread

200 g flour
100 g butter
2 tablespoons of milk
2 tablespoons sugar
50 g caster sugar
1 egg yolk
For the filling

200 g milk chocolate
4 tablespoons fresh cream
salted butter caramel

Preparation
For the shortbread
In the bowl of your Thermomix, add the butter and sugar and mix for 10 seconds on speed 3.
Then add the milk, oil, vanilla extract and egg and mix for 20 seconds on speed 3.
Add the flour and knead for 2 minutes on spike mode.
Remove the dough and place in the fridge for 30 minutes.
On a floured work surface, roll out the dough and then cut out biscuits using a round biscuit cutter.
Place the biscuits on a baking tray covered with baking paper and bake for 10 to 15 minutes at 180°C. Remove and leave to cool.

For the filling and assembly
Meanwhile, prepare the salted butter caramel and leave to cool.
Then place 1 to 2 teaspoons in the centre of each biscuit, forming a circle.
Place in the fridge until the caramel has set.
In the bowl of your Thermomix, put the chocolate in pieces and blend for 7 seconds at speed 7.
Add the cream and heat for 4 minutes, 50°C on speed 2.
Then place 1 to 2 teaspoons of melted chocolate on top of the caramel.
Finally, place the biscuits in the fridge for about 30 minutes before eating.
