New-York cheesecake

For the base :
200g of biscuits with butter
80 g butter
For the filling :
900g Philadelphia (fromage frais)
200g sugar
1 sachet of vanilla sugar
4 eggs
60 g flour
20 cl of liquid cream

Step 1 – New York cheesecakeCrush the biscuits with a pestle and mortar or chop them up. Melt the butter and add it to the crushed biscuits. Mix well.
Step 2 – New York cheesecakeLayer the bottom of the springform pan with baking paper. Butter the sides of the tin and pour in the biscuit + butter mixture. Press the mixture well into the bottom and up the sides of the tin using a spoon. Chill in the fridge while you prepare the cake.
Stage 3 – New-York cheesecake In a bowl, put the fresh cheese and the sugars, and whisk to loosen the cheese.
Step 4 – New-York cheesecakeAdd the eggs and flour, and mix well until the ingredients are well incorporated.
Step 5 – New-York cheesecakeFinish by adding the cream.
Take the mould out of the fridge and pour in the mixture.
Step 6 – New-York cheesecakeBake for 40 minutes at 190°C.
Leave to cool well after baking, then leave in the fridge for a few hours to ensure perfect unmoulding!
Step 7 – New-York cheesecakeThere you go, your New-York cheesecake is ready!
